Chan-Chan-Yaki (Steam Fried Salmon with Miso Sauce)
Chan-Chan-Yaki is originally from Hokkaido, the northest part of Japan. The sauce made with miso paste is sweet and flavorful, which goes GREAT with cooked rice. Make sure you prepare a lot of rice with this dish!!

1.5-2LbSalmoncut into 4-5 pieces
1/8HeadCabbageYou can use Napa cabbage as welll.
1/2Package MushroomsAny kind of mushrooms go well.
3-4TbspSugarI prefer sweeter, but it depends on you.
4TbspSake=Japanese cooking wine. If not available, use water.
A pinch ofSalt
Cut the onion, carrot, and mush rooms thinly. Cut the cabbage in a bite-size.
Mix all the seasoning except for butter in a small bowl, mix it well. Cut the butter in small pieces.
Wipe extra water off from the salmon pieces.
Use a large pan or a hot griddle, place the vegetables and put the salmon on them.
Place the butter pieces on the top.
Cover the lid and start the heat over the medium heat, cook for 10mins. You don’t have to stir them.
The vegetables become translucent, pour the seasonings over the ingredients and mix it well.
