  • 1.5-2 Lb Salmon cut into 4-5 pieces
  • 1/2 Onion
  • 1/8 Head Cabbage You can use Napa cabbage as welll.
  • 1 Carrot
  • 1/2 Package Mushrooms Any kind of mushrooms go well.

The Sauce

  • 3-4 Tbsp Sugar I prefer sweeter, but it depends on you.
  • 4 Tbsp Miso Paste
  • 4 Tbsp Sake =Japanese cooking wine. If not available, use water.
  • 2 Tbsp Soy sauce
  • 2 Tbsp Salted butter
  • A pinch of Salt


  • Cut the onion, carrot, and mush rooms thinly. Cut the cabbage in a bite-size.
  • Mix all the seasoning except for butter in a small bowl, mix it well. Cut the butter in small pieces.
  • Wipe extra water off from the salmon pieces.
  • Use a large pan or a hot griddle, place the vegetables and put the salmon on them.
  • Place the butter pieces on the top.
  • Cover the lid and start the heat over the medium heat, cook for 10mins. You don’t have to stir them.
  • The vegetables become translucent, pour the seasonings over the ingredients and mix it well.
  • Cook for another 10mins. It’s done!

Satsuma-Age is originally from the south of Japan, but it’s very popular among all ages throughout Japan. It’s one of the best lunch box ingredients as well as a dinner main dish. Also, you can freeze the rest for the next time, and reheat it before eating.

  • 1 Lb Fish paste You can make homemade fish paste by smushing cod fish. About the store bought product, please watch the video.
  • 5 Inch Gobo =Burdock
  • 1/2 Onion
  • 1 Carrot Optional
  • 2 Tbsp Pickled red ginger Optional
  • Any Toppings As you like Ex) Corns, Edamames, Hijiki, Tofu, etc

The Dough

  • 1 Large egg
  • 1 Tbsp Sake =Japanese cooking wine or just water
  • 2 Tbsp Sugar
  • 1 Tbsp Soy sauce
  • 1 tsp Salt You can reduce the amount of salt if you like the lighter taste.
  • 2 Tbsp Cornstarch Or potato starch
  • 1 Tbsp Minced ginger Optional


  • Cut all the vegetables into small pieces and put them into a large bowl. Mix with the fish paste.
  • Knead the dough until it gets stickier by your hand.
  • Preheat the oil in a large pot to about 335℉ (170℃).
  • Shape the dough into oval balls with two spoons. And place them gently into the pot.
  • Deep fry them for 4-5mins for one side, and the same for the other side.
  • When both of the sides are golden browned, take them out on a piece of paper or heat resistant tray. Done!
  • Satsuma-Age is great in hot and cold! I recommend to dip it into Mayonnaise....yum!!!

Japanese Sweet Potato Cake

“スイートポテト Suiito-Poteto” is a very popular Japanese dessert, which brings us a nostalgic memory as Japanese. It’s sweet, silky, and creamy... It goes great with a cup of milk or green tea. Hope you enjoy this Japanese Autumn sweet.

  • 1 Sweet potatoes (American ordinary sweet potato is fine. About 600g.)
  • 3 Tbsp Salted butter
  • 5-6 Tbsp Sugar
  • 4 Tbsp Milk (Or milk alternatives)
  • 1 Egg york
  • 1 tsp Vanilla oil (Or 3 drops of Vanilla essence)

[The mixture]

  • 1 Egg york
  • 1 Tbsp Milk (Or milk alternatives)


  • Peel sweet potatoes, cut it into bite-sizes, place them in a micro-safe bowl. Microwave it for 5mins at High. You can boil the sweet potatoes in a pot until they become soft and drain instead of using a microwave.
  • Mash the sweet potatoes until there are no more lumps with a musher or a fork.
  • Add all the ingredients into the container and mix them well with a spatula. If a hand mixer is available, use it for making the texture smoother.
  • Shape it in ovals in foil cups or oven-safe cups. You can shape them with your hands or two spoons.
  • In a small bowl, make the mixture of egg york and milk. Brush the mixture over the sweet potato cakes. Make sure that you use all of them.
  • Bake them in a toaster oven for 15-20mins until it’s browned on the tops. If you use an oven, preheat the oven to 390°F(200℃)and bake them for about 13-15mins.
  • You don’t have to brown them. Grill them until they are slightly burned.. it’s still smooth and tasty. (My kids like this style more than the browned ones!)


Japanese yams are available at Asian markets. We call the yams “Satsuma-imo”. It has purple-ish color skin, white-yellow-ish inside. After cooking, it’ll be yellower.
The Japanese yams taste much sweeter than ordinary sweet potatoes in the US. If you can use Japanese sweet potatoes, reduce the amount of sugar a little bit and try to taste the taste of yum yams! To make the amount of yams 600g, you’ll need to use 2-3 Japanese yams.
